Peppers can develop small brown to white lines or cracks referred to as corking. They have the appearance of stretch marks and often appear on the shoulder of the fruit, although they can be located anywhere on the fruit.  These corky striations can run the length of the fruit or encircle the stem or fruit. This condition can reduce the visual appeal of the pepper, but does not notably impact its palatability.

Corking is caused by variations in moisture and temperature. Certain cultivars (like older varieties of jalapenos) are more prone to corking.

Corking can be reduced by providing uniform supplies of moisture to the plants. Mulch and water the plants during dry weather. Also, plant crack-resistant varieties, such as Jalapeño Jalafuego.
